Mater, the Sardinia oyster
Mater embodies Italian oyster farming excellence. The oysters are farmed right through the cycle, from the seed, with great hard work and dedication, using the lantern net method consisting of small floating cages containing oysters. The shells are hard, durable and homogeneous droplet-shaped with a uniform white mother of pearl. The oysters themselves are very plentiful, crunchy and iodised but it is then the sweetness which predominates with a long lasting vegetal and dried fruit and nut flavour. Simultaneously complex and delicious.
